Medium intensity fruity green

Olfactory aspect : clear, herbaceous intensity. A frank nose of olive leaf, cut grass, green almond and tomato. Secondary notes of green apple and fig tree.


Palate : Fresh, full-bodied attack with a well-balanced , moderate bitterness . Herbaceous notes dominate, supported by nuances of safflower, raw artichoke, and banana peel.


Ardence : progressive but persistent, typical of well-crafted green fruit. Elegant tingling at the back of the throat, testifying to a good level of polyphenols.


Harmony : vibrant, structured profile, which expresses the strength of the mountain terroir . Perfect with raw vegetables, salads, raw fish, gazpacho or grilled vegetables

How to use a green fruity olive oil?



This green fruity extra virgin olive oil is ideally used raw, as a finishing oil, to preserve its vegetal intensity and aromatic freshness.

It particularly enhances:
• fresh salads and crudités
• fish, ceviches, and seafood
• burrata and fresh cheeses
• grilled vegetables
• toasted bread, tomato, and fleur de sel

Recommended use
Pour just before serving, without cooking, to maintain the full vibrancy of the green fruitiness.

100% Manzanilla Cacereña - PDO Sierra de Gata -Hurdes

Fatty acids (100 g of oil)
Oleic acid (monounsaturated): 72–75%
Saturated acids: 12–14%
Polyunsaturated acids: 8–10%

Polyphenols : 500–800 mg/kg; High values, thanks to early harvest.

Vitamin E (α-tocopherol) : approx. 12–15 mg/100 g
