Today, I create a rare extra virgin olive oil, born from a simple and demanding desire: to return to the essentials.
A raw, confidential product, shaped by the character of the terrain and climate, tradition, and respect for the land and living things.

There are lands that do not give themselves up easily. Authentic, rugged, silent lands.
The Sierra de Gata is one of them.
The Sierra de Gata, in the heart of Spain, vibrates with a deep, ancient energy, almost palpable. It inspires with its wild and untouched beauty. It mesmerizes with its peaceful and endless views.
This place is where my roots are, where everything begins now.

In July 2024, my husband and I bought a plot of century-old olive trees perched on terraces in the hollow of the Sierra de Gata, on the edge of a stream on the land of my ancestors.
In January 2025, we acquired a larger plot with a finca in the high plains of the Sierra de Gata near the 13th century ruins of the Salvaléon stronghold - a listed monument.
From these hills of Extremadura, we carefully craft a confidential extra virgin olive oil from our family farms.
An oil with character, memory, and vibrancy. Nothing is produced quickly. Nothing is produced without reason.
We believe in the nobility of simple gestures, in the elegance of silence, in the power of a place vibrant with wild freedom.

Preserve biodiversity and natural resources. Respect the earth and all living things.
Regenerative agriculture was our choice, despite the impact on yield.

Our priority is to cultivate the art of slowness by respecting the rhythm of our olive trees and to escape the race for yield through the use of chemical inputs.
